Why this recipe works
Warm chicken meets properly cold greens. The temperature contrast makes the bowl feel freshly composed rather than like refrigerated leftovers.
The dressing performs two jobs. A thin coat seasons the leaves; a final spoonful over the chicken brings the herbs into every substantial bite.
Cucumber and feta keep richness in check. Cucumber brings wet crunch, feta gives salty tang, and avocado supplies soft, buttery contrast without turning the salad into a bound chicken mixture.
Cook, rest and compose
Wash and dry the greens
Separate the romaine leaves and wash them with the spinach in plenty of cold water. Spin in small batches, then spread on clean towels until completely dry. Tear the romaine into generous bite-size pieces and chill both greens while the chicken cooks.
Prepare the chicken
Place the chicken between two sheets of baking paper and gently pound the thick ends until each breast is an even 1.5 to 2 cm thick. Rub with the olive oil, salt, and black pepper.
Cook safely
Heat a large skillet over medium-high heat. Cook the chicken for 5 to 7 minutes on the first side and 4 to 6 minutes on the second, working in two batches if the pan is crowded. Check the thickest part with a food thermometer; every piece must reach 74°C / 165°F.
Rest and slice
Transfer the chicken to a clean board and rest for 5 minutes. Slice across the grain into strips about 1 cm thick, keeping any juices on the board away from the prepared salad.
Prepare the vegetables
While the chicken rests, slice the cucumber. Halve and stone the avocados, scoop the flesh from the skins, and cut each half into thick slices. Keep the herbs whole or tear only the largest leaves.
Dress the greens first
Put the romaine, spinach, cucumber, and herbs in a wide bowl. Add 3/4 cup of the Green Goddess Dressing and toss from the bottom until every leaf is lightly coated. Fold in the feta.
Compose the main-course salad
Divide the dressed greens among four plates. Arrange the sliced chicken and avocado over each portion, then spoon the remaining 1/4 cup dressing across the chicken. Serve immediately.

Even the thickness
Gentle pounding removes the thick hump, so the thin end does not dry out before the center cooks safely.
Use a thermometer
Color and cooking time are not reliable tests. Probe the thickest part of each breast and look for 74°C / 165°F.
Rest before slicing
Five quiet minutes make the chicken easier to slice cleanly and keep more of its juices inside the meat.
Dress in two passes
Toss the leaves first, then finish the chicken. This gives both components enough dressing without flooding either one.
Safe chicken doneness
The USDA Food Safety and Inspection Service gives 74°C / 165°F as the safe minimum internal temperature for all poultry, including breasts. Measure at the thickest point with a food thermometer. Do not rely on firmness or the color of the meat and juices.
Leaves that hold the dressing
Romaine supplies juicy ribs and enough structure for creamy dressing; baby spinach softens the edges without disappearing. Wash both in cold water, spin in small batches, and finish on clean towels. Water left on the leaves dilutes the dressing and prevents it from clinging.
Variations—not the primary recipe
Vegetarian: replace the chicken with 2 x 400 g cans chickpeas, drained, rinsed, dried and seasoned; use the vegetarian adaptation of the dressing. Seafood: replace the chicken with about 600 g cooked salmon, broken into large flakes and added after the greens are dressed. Both create a different salad and should be treated as alternatives, not additions.
Make ahead and storage
Cook and chill the chicken up to 2 days ahead, keeping it in a sealed container. Wash and thoroughly dry the greens up to a day ahead; refrigerate them with a clean towel. Prepare the cucumber and herbs earlier the same day, but cut avocado only before serving. Keep the dressing separate. Refrigerate leftovers promptly and use within 1 day for acceptable leaf texture; never leave cooked chicken at room temperature for more than 2 hours.
